Baked Cinnamon Roll Pancakes

 I try really hard to make healthy breakfasts for my family. But sometimes you find a recipe that has to be made, regardless of the calorie count. This is one of them.

Baked Cinnamon Roll Pancakes. Delicious.

This is a combination of two different recipes I pinned on Pinterest. You can find them HERE and HERE. Both happen to be from BigRedKitchen.com

Basically, you make baked pancake batter. Then you mix the ingredients for the cinnamon swirl and pour it into the baked pancake batter and swirl it around.

You can add the cream cheese on top if you wish. My kids are a bit messy and they really didn't need the added sugar. I drizzled a *little* maple syrup on it and they ate almost all of it. Well.... I helped.

~ 3/4 cup milk
~ 2 TBL melted butter
~ 1 large egg
~ 1 TBL sugar
~ 1 cup flour
~ 2 tsp. baking powder
~ 1/4 tsp salt

Cinnamon Swirl
Using a hand mixer, mix until smooth:
~ 1/2 stick softened butter, almost melty
~ 1/2 cup packed brown sugar
~ 1 TBL cinnamon

~ Preheat oven to 350 degrees. Lightly grease 8x8 baking dish. 
~ In large mixing bowl, beat together milk, butter, and egg. Add sugar and gradually beat in flour.
~ Carefully stir in baking powder and salt.
~ Pour batter into prepared pan
~ Prepare cinnamon swirl by pouring mixture into large pastry bag (or baggie). Cut off end and drizzle into pancake batter.
~ Use knife to swirl mixture into batter
~ Bake 20- 25 minutes
