Caesar's Guacamole

I've never cared for the taste of avocados or guacamole until I tried our friend Caesar's recipe.

It's the most delicious, simple recipe. And he's given me permission to share it with you:

Squeeze about 3TBL of lime juice into a bowl. It's usually about 1 lime depending on how juicy they are.

Then add approximately 1/2 tsp of sea salt. Sea salt is the key. It needs to be added to the lime juice before any other ingredients so it can melt and incorporate itself. 

Don't add too much salt at this point as you can't take it out if it's too much. Better to add in more at the end if you feel it needs it.

 Let it sit for about 15 minutes. IMPORTANT STEP!

I like the Morton coarse Sea Salt

While the lime juice and sea salt blends, start chopping red onion. Jason doesn't like raw onion AT ALL. He would prefer I left it out entirely. But I agree that it adds so much flavor. Therefore, I only put a little in, about 1 1/2 - 2 TBL worth. You can add more if you prefer.

Add the red onion to the lime juice and sea salt, let it sit while you prepare the avocados.

Slice 3 Large avocados lengthwise, remove pits, scoop out the good stuff and add to the bowl. You can mash it all up in the bowl together.

Let the whole recipe sit for 10 minutes before judging the flavor. The sea salt-infused lime juice will blend with the avocado and you'll notice a flavor change after awhile. At this point, adjust your recipe as needed.

~3 TBL lime juice, approximately 1-2 limes
~1/2 tsp Coarse Sea Salt
~1 1/2 - 2 TBL red onion (more if preferred)
~3 Large avocados

1)Squeeze 3 TBL lime juice into bowl, add 1/2 tsp coarse sea salt. Let sit for 15 minutes
2)Chop 1 1/2 - 2 TBL red onion and add to bowl
3)Slice 3 large avocados lengthwise, remove pit, scoop out and add to bowl. Mash all together until desired consistency.
4)Let sit 10- 15 minutes before serving.

Store as air tight as possible in refrigerator if you haven't eaten it all.
