Pumpkin Pancakes

Fall means pumpkin flavored EVERYTHING in our house. And this weekend was no exception!


Pumpkin Pancake recipe found on Pinterest:

~1 1/4 cups all purpose flour
~2 TBL sugar
~2 tsp baking powder
~1 tsp cinnamon
~1/2 teaspoon ground ginger
~1/2 tsp salt
~1/8 tsp nutmeg
~pinch of ground cloves
~1 cup milk
~6 TBL canned pumpkin puree
~2 TBL melted butter
~1 egg
~1/2 cup chopped walnuts (optional)

1. Whisk together flour, sugar, baking powder, cinnamon, ground ginger, salt, nutmeg and pinch of ground cloves.

2. In separate bowl, stir together milk, pumpkin puree, melted butter and egg; fold mixture into dry ingredients. Do not mix any more than you have to. Lumpy is a good thing.

3. Melt butter in skillet over medium heat; pour 1/4 cup batter for each pancake. Cook pancakes approx. 3 minutes per side.

*I found these to be a bit bland. More spices definitely needed. Perhaps doubling the spice amount?

I have made these multiple times since and here is how I have changed the recipe: quadruple or more the spice amt and sugar. They are so much tastier that way!!
