Lemon Crinkle Cookies

Found a recipe on Pinterest that demanded to be tried out:

They claim it's a recipe contest winner. I just happened to have two lemons begging to be used.

So I grated them for lemon zest

Then squeezed their sweet, citrus-y guts out

In my mixer, I creamed butter and sugar until fluffy. Then added vanilla, lemon zest and lemon juice.

Scrape sides and mix again. Stir in dry ingredients slowly, until combined, excluding powdered sugar. Scrape sides of bowl and mix again.

Pour powdered sugar into separate bowl and roll heaping teaspoons of dough into balls and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.

This was a great activity for Quinn. She loves helping mommy cook. Having her roll the dough in powdered sugar made her day.


Bake 9-11 minutes or until bottoms begin to barely brown and cookies lose the shine. Remove and let cool for 3 minutes before placing on cooling rack.

After a taste test, they were given the thumbs up!

We finished off the cooking with one more batch (total of two). By this time, Quinn was licking the powdered sugar off her fingers and table.

Here is the final product. Not bad! They are really good. Very fresh and light. And all the ingredients were in my pantry. Always a plus.

Ingredients:
1/2 cup butter, softened
1 cup granulated sugar
1/2 tsp vanilla extract
1 egg
1 tsp lemon zest (I used the whole lemon)
1 TBL fresh lemon juice (again, used whole lemon)
1/4 tsp salt
1/4 tsp baking powder
1/8 baking soda
1 1/2 cup all-purpose flour
1/2 cup powdered sugar

Directions:
Preheat oven to 350. Grease baking sheet with cooking spray (I didn't and was fine).

In large bowl, cream butter and sugar until light and fluffy. Mix in vanilla, egg, lemon zest and lemon juice. Scrap sides and mix again. Stir all dry ingredients into bowl slowly, just until combined, excluding powdered sugar. Scrape sides of bowl and mix again. Pour powdered sugar into bowl and roll heaping teaspoons of dough into ball and into powdered sugar. Place on baking sheet and repeat with remaining dough.

Bake 9-11 minutes or until bottoms are brown and cookies lose their shine. Remove to cooling rack after 3 minutes.

I have been tempted to make these cookies before - but, I can't get Tim on the lemon train! They look great! And Quinn can come and help me bake any day - what a great helper!!
